Writing better documentation

This is another attempt at making the developer documentation for irdest more understandable. Previously I had deleted a lot of documents that were deemed out of date. In this commit I re-wrote the introduction to the project with my "knows networking but doesn't know irdest"-hat on.

Feedback very welcome. Further sections still need to be added.
